I know I’ve been making you so many desserts lately, but I could not go another day without making this for you.
If you follow me on Instagram, I made these on a whim last week because I needed a cookie and I did not have any chocolate chips in my apartment. Sad, I know, but I just have not been able to remember to purchase them when I go to the grocery store.
So while I was sitting in my apartment craving cookies, the only option I had was to turn to a peanut butter cookie. Not that such a decision could ever be bad.
My first instinct was to turn to the Cookie Queen herself, Maria from Two Peas and Their Pod. She will make a cookie out of anything and it will be beyond delicious. So delicious that you’ll wonder how you spent your entire life without them.

They are addicting to say the least. And they’re filled with a cup of peanut butter, which means that they are one of the most delicious cookies I have ever tasted. Now you understand why I had to make these for you, right?
Peanut Butter Oatmeal Sandwich Cookies
Recipe from the Cookie Queen, Two Peas and Their Pod
Yield: 18 sandwich cookies
Prep Time: 15 minutes
Cook Time: 10-12 minutes
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, at room temperature
1/2 cup creamy peanut btter
1/2 cup sugar
1/2 cup light brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 cup quick-cooking oats
3 tablespoons unsalted butter, at room temperature
1/2 cup creamy peanut butter
1 cup powdered sugar
3 tablespoons heavy cream
Preheat oven to 350 degrees. Cover a baking sheet with cooking spray or line with a Silpat. Set aside.
In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
In the bowl of a stand mixer, beat butter, peanut butter, and sugars on medium speed until light and fluffy. Once combined, add in the egg and vanilla. Mix until they are evenly distributed. With the mixer on low, slowly add the dry ingredients, mixing until they are just incorporated. Remove the bowl from the mixer and add in the oats. Stir by hand until they are combined.
Using a cookie scoop or a tablespoon, roll dough into balls and place on the baking sheet. Place about 2 inches apart. Bake for 10-12 minutes, or until the cookies are golden brown. Remove from the oven and let them cool on the baking sheet for a few minutes. Place on a cooling rack to cool completely.
While the cookies are cooling, make the filling. Combine the butter, peanut butter, and powdered sugar in the bowl of a stand mixer. Beat until smooth. When it’s mixed, add in the heavy cream and beat until light and fluffy. Using a knife, spread the peanut butter filling between cookies that are roughly the same size. Sandwich them together and enjoy!
