I’m so sorry dear readers, for not posting the past two days. I always write my posts the night before since I just do not have time in the morning or any cohesive thoughts. So Sunday night came along and like most people, I was sucked into the Oscars.
In case you weren’t watching, the wonderful Jennifer Lawrence, who I am pretty sure is my long-lost sister, won Best Actress. And Argo took Best Picture. The best decisions that the Academy has made, in my opinion.
And then of course Monday night, I came back from work only to remember that I had a ton of assignments due, ugh. I won’t deny that I had the worst case of senioritis my senior year of high school, but it was nothing compared to this semester. I cannot get myself to do anything. Maybe it’s because I know this is my last semester of school ever. It’s really not helping me. All I know is that I would rather clean my bathroom than do any schoolwork.
But all this senioritis I have is really helping my baking and cooking since that’s pretty much all I want to do anymore. I decided to make you two different styles of loaves this week. Today’s loaf is cheesy and delicious, just like most of the things I made last week.
What is it about cheesy bread? I’m obsessed with Domino’s Garlic Cheesy Bread and my friend Ainsley told me that those new Garlic Bread Lays Chips are tah-die-fer. Cheesy bread combines two of my favorite things in life: bread and cheese. Yep, I’m pretty sure I just shocked the nation with that one. But really, I can’t figure it out.
Cheesy Puff Pull-Apart Bread
Adapted from the Cheese Queen, How Sweet It Is
Yield: 8 servings
Prep Time: 2 1/2 hours
Cook Time: 35 minutes
1 3/4 cups all-purpose flour
1 cup whole wheat flour
1 tablespoon sugar
2 1/4 teaspoons (1 package) active dry yeast
1/2 teaspoon salt
1/3 cup milk
1/4 cup (1/2 stick) butter
1/4 cup water
2 eggs, at room temperature
12 ounces cheddar cheese, grated
1/4 (1/2 stick) butter, melted
In the bowl of a stand-mixer, combine 1 cup of all-purpose flour and 1 cup of whole-wheat flour with sugar, salt, and yeast. Stir to mix. In a small saucepan, heat milk and butter over low heat just until the butter melts. Allow to cool for one minute and then add the water. Pour the butter mixture into the dry ingredients and mix using the dough hook of your mixer. Add the eggs one at a time, allowing them to completely incorporate until adding the next. Add 8 ounces of the cheese into the dough and mix together with your hands. Mix in the remaining all-purpose flour and knead until it forms a ball.
Oil a large bowl and place the dough in it. Cover with a towel and place in a warm spot and allow it to rise for one hour. After an hour, uncover the dough and punch it down. Lightly flour your workspace and roll the dough out into a giant rectangle, roughly 12 x 12 inches. Brush the dough with melted butter and cover with the remaining cheese.
Slice the dough into 6 even strips. Lay the strips on top of each other and cut into 6 pieces again. Butter a 9 x 5 loaf pan and lay the slices, cut side down. Cover the dough with a towel and allow it to rise for another hour.
Preheat the oven to 350 degrees and set the loaf pan on a baking sheet. Bake for 30-35 minutes or until the top is golden brown. Allow the bread to cool, serve, and enjoy!
